  1. Melt the finely chopped dark chocolate using a bain-marie (double boiler) or microwave. Remove from the heat and allow it to cool to room temperature. Once cooled, add the orange olive oil and stir until smooth and fully incorporated.
  2. Separate the egg whites from the yolks. In a clean, dry bowl, whip the egg whites with a hand mixer until stiff peaks form. In a separate bowl, beat the egg yolks with the icing sugar until pale, creamy, and fluffy.
  3. Add the melted chocolate and olive oil mixture to the beaten egg yolks and gently mix until combined.
  4. Fold the whipped egg whites into the chocolate mixture in 2–3 batches using a silicone spatula. Stir carefully with upward folding motions to maintain the mousse’s airy texture.
  5. Divide the mousse evenly into 12–15 small shot glasses. Refrigerate for at least 2–3 hours until set and nicely chilled.
